The Boulders Resort & Spa’s signature Palo Verde Restaurant will be hosting a specialty New Year’s Eve dinner on Monday, December 31st with seating available from 5pm-10pm featuring a champagne toast, amuse bouche and pre fixe, three course menu including:

·         Crispy Pork Belly with parsnip and pickled apple

·         Steadfast Farms Baby Greens with roasted persimmons, caramelized goat cheese, spiced cashews, banyuls and vinaigrette

·         Celery Root Bisque with butter poached lobster, chive crème fraiche and caviar

·         Pan Roasted Sea Scallops with hayden mills polenta, heirloom chard and pomegranate bubbles

·         McFarland Prairie Pheasant with chanterelle mushroom roulade, pickled blackberries, charred scallion, gnocchi and smoked jus

·         Duroc Pork Chop with caramelized apple-watercress risotto, charred Brussel sprouts, and garlic gastrique

·         Grilled Beef Tenderloin with herb whipped potatoes, balsamic braised mushroom, foie gras, and bleu cheese foam

·         Salted Caramel Tart with roasted persimmons, caramelized goat cheese, spiced cashews, and banyuls vinaigrette
