(Tempe, AZ) – This spring, the all-new, full-service dining destination Glenrosa Restaurant will debut on the manicured grounds of Grass Clippings Rolling Hills Golf Course in Tempe. Conceptualized by the Grass Clippings team and James Beard-nominated chef Samantha Sanz, Glenrosa will showcase authentic Sonoran-inspired cuisine in an all-new, architecturally striking 5,800-square-foot space. Boasting panoramic views of the fully-lighted par three golf course and the and iconic Papago Buttes, the restaurant will serve a dual purpose; a dining destination for foodies both local and visitors alike, and an all-new final amenity to one of the most lauded new golf experiences in the Southwest.
Helmed by Samantha Sanz, one of the valley’s most beloved chefs who was nominated for the James Beard Foundation’s Rising Chef of the Year award, Glenrosa will be the first restaurant she’s crafted from the ground up. Providing a canvas for culinary creativity more expansive than her highly successful positions at award-winning institutions like Talavera at the Four Seasons, Virtu Honest Craft, and Sanctuary Camelback Mountain, Glenrosa is a personal passion project, says Sanz. “This is the Mexican cuisine I grew up eating and cooking in Sonora, authentic dishes made with clean, fresh and local (as much as possible) ingredients. We’ll offer something for everybody, from casual burgers, Sonoran hotdogs and tacos, to fire-grilled family-style platters like ember-roasted chicken and tomahawk steaks with grilled veggies.”
Sanz is joined by Grass Clippings’ director of F&B, Caroline Hayworth; who spent nearly 7 years with Pebble Beach Resorts as the F&B manager.
Glenrosa’s commitment to farm-fresh, honest ingredients also extends to the seasonal cocktail menus, made exclusively with fruits and citrus fresh-squeezed daily, plus house-made agave syrups and scratch mixes. Those interested in getting an early taste of the restaurant’s approach to mixology can pop over to the outdoor portion of the Glenrosa Bar now, which is already open daily from 10 am to 11 pm with Happy Hour from 4 to 7 pm. The bar is adjacent to the 15,000 square-foot practice putting green and the Glenrosa event lawn, where guests are treated to regular live music and lawn games. The cocktail experience will further expand with the completion of the restaurant, providing the ultimate all-day, all-night hangout, inside or out.
Rooted in the “Stay Grassy” philosophy of Grass Clippings, Glenrosa is a celebration of people, craft and experiences, says Grass Clippings Co-Founder Jake Hoselton. “This area has always been a gathering point, dating back to the ancient Hohokam people, and famously with Hayden’s Crossing in Tempe, because it was one of the few places where you could cross the Salt River. Today, we’re proud to honor this history, both with authentic Sonoran Desert cuisine, but also by welcoming people from across the Valley to this scenic setting.”

About Grass Clippings Rolling Hills
Arizona’s only night golf facility, Grass Clippings Rolling Hills Golf Course opened in 2023 following a $15 million renovation and reimagining of this longtime gem in Tempe’s Papago Buttes. The golf course renovation project included rye grass overseed, construction of a newly designed 9th hole, new tee boxes, installation of a new state-of-the-art irrigation system to improve turf quality, and a new 15,000 sq. ft. practice putting green. Grass Clippings Rolling Hills then opened to night golf play in December 2023 thanks to more than 78 LED lights illuminating the course, while enjoying 360-degree views of downtown Tempe, Sky Harbor Airport, downtown Phoenix, the Phoenix Zoo and the nighttime silhouette of Papago Buttes.
The introduction of lights and night golf is just the beginning for the golf and entertainment venue, the flagship location for Grass Clippings’ cutting-edge vision. Alongside the now opening Glenrosa Bar and the upcoming Glenrosa Restaurant, the team previously unveiled a refurbished golf shop and clubhouse, an activity lawn and video display, and an entertainment site for live music, markets, and events, with full completion of all projects targeted for 2025.
